French Creme brulee recipe for Kyle

I promised Kyle send him the Creme brulee recipe because he took mine at the Restaurant LOL

                                                        mmmmmmmm !! Look the caramelized sugar on the top !

 

Ingredients for 6 servings :

6 egg yolks

100g sugar

40 cl heavy cream

25 cl milk

90g brown sugar ( to caramelize the top )

Vanilla extract

 

First !

Put the sugar into the egg yolks

 

Beat until smooth

 

Add heavy cream and the milk. Mixt the whole

         ... OKAY

Now, you can add the vanilla extract

 

Put the mixture into 6 ramekins, preheat the oven and place in to 212°F ( 100°C ) for about 30 mn

 

Then, allow to cool the room temperature before refrigerate ( about 4 h ).

When you're ready to serve, put about a teaspoon of brown sugar on the top, and caramelise with a cooking torch or an iron 

Leave to cool for a couple of minutes, and then, ENJOY !

    Looks good, smells good Tongue outand OH SH*T that was my hard drive overheating, no seriously that looks very nice 10/10 for presentation.


    Over here when the cook was making Creme Brulée for the days menu there cooking torch was a blow torch as used by your local plumber as it was easy to get gaz refills from the Truckers Shop, over here made by Camping Gas which is owned by Coleman over there. the amount of browning is really to the cooks taste as some like it easy and others like it HARD.

    Isn't in funny, we went metric years ago here in Oz but they still talk pounds and ounces when children are born. Figure that?

  • Interesting Nadine,  I've always used a table spoon as 20mls and a teaspoon as 5ml.  The recipe looks great.  It's getting tried out this weekend.  Thanks. 


    Chimi,  I'm not on the green ones, I'm trying to get Clyde off them.  I'm hoping to progress him to orange ones in the next week or two.
